Butcher’s Bistro is an upscale-casual steakhouse and retail butcher. We specialize in nose-to-tail preparation and buy Colorado-local cows, pigs, lambs and poultry. We also buy cheese, eggs and greens from Colorado farms in an effort to give our guests a true Colorado experience.
All the cured meats you'll find on our charcuterie board are cured and prepared in-house.
Butcher's Bistro offers a full menu and daily steak selections. We also encourage our guests to pick any cut of steak from our butcher case and have it prepared to their liking.
From sausage, to chicken liver pate, to smoked meats, everything is prepared in house with a “comfort food meets new American bistro” theme. Whether enjoying lunch or dinner in our restaurant, or purchasing a pound of dry-aged beef and a few smoked kielbasa to take home for the grill, Butcher’s Bistro is a great choice for family, friends, and neighborhood foodies.
